first photo is Iberico ham. The best quality hams are also known as 'La
pata negra'. (The black leg). It ranges in price from 100€ to over
750€ a leg. At the lower price, you won't get good quality, but anything
from about 300€ a leg upwards will be superb. When buying a leg, the
part just before the hoof should be narrow, not actually like the photo
below, which has a thick ankle. You can of course buy it by the gram as
well. Go for at least 5€ for 100 grams in a butcher shop to get the
best quality. The second photo is Manchego cheese from Castilla la Mancha
(home of Don Quijote), with sliced Iberico ham, and of course, olives.
The three are almost always served together. There are many types/flavours
of olive in Spain. The taste we Brits are accustomed to are 'Azetunas manzanillas'.
